This month’s Baking Partners challenge was to make one of three types of cookies.  The one I selected was Oreo’s.  Now I am a big Oreo cookie fan, however I usually purchase the Golden Oreo’s.  From a child, I have never been a big chocolate person and I hate how your teeth get all black from the Oreo’s and you have to brush your teeth as soon as you finish eating them.  As soon as the Golden Oreo’s came on the market, I was hooked and then I discovered something better.  The Paul Newman brand makes their own line of flavored Oreo type cookies as well.  Nabisco probably has the name Oreo trademarked so Paul Newman calls his O’s and my favorite are the Ginger O’s.

Using the recipe given to us by Reeni, which she had adapted from Serious Eats, I further adapted the recipe to make these Ginger-Almond Oreos.

Ginger-Almond Oreos

Ingredients:
6 tablespoons butter, softened
1/2 cup sugar
3 tablespoons firmly packed brown sugar
1/4 teaspoon salt
1/4 teaspoon + 1/8 teaspoon baking powder
1/4 teaspoon baking soda
2 teaspoons ground ginger
1/2 teaspoon almond extract
2 egg yolks
3/4 cup all purpose flour
1 cup almond flour/almond meal

Cream butter and sugars.  Add egg yolks, one at a time.  Add almond extract and mix.
In another bowl, sift all of the dry ingredients together.  Add this to the wet ingredients and mix until you have a smooth dough, kneading by hand when necessary.

Chill in refrigerator for two hours.
Preheat oven to 350 F.
On a floured work surface, roll out the dough to 1/8″ thickness.  Using a 2″ round cookie/biscuit cutter, cut out cookies and place on a greased cookie sheet.

Bake for 15 minutes.

Filling Ingredients:
8 tablespoons shortening
1 1/4 cups powdered sugar
1/2 teaspoon almond extract

Combine all ingredients and mix well, until a homogenous cream filling consistency is achieved.

To assemble cookies:
Take 1 cookie and spread a little filling on the bottom of the cookie and then take another cookie bottom side down and place on top of cream filling and press together.

These are perfectly crispy cookies with a sweet cream filling.  Delicious!
