Mint Pandan Chocolate Frozen Yogurt

This Mint Pandan Chocolate Frozen Yogurt utilizes freshly made mint extract. This natural frozen treat is one you won’t mind giving your kids as a treat!

A few weeks ago, my friend, her Mom and her two kids unexpectedly stopped by and ended up spending the night. Usually when her two super picky kids come by, I make sure I have some kid friendly snacks around. This has made them accustomed to having snacks when they come to my house. As this was unexpected, there were no snacks around at all. Work had been busy so no muffins or cookies and not even store bought ones were in the house. It’s summertime so whenever they come in this season, I usually have some kind of ice cream or ices in the freezer, but the only thing I had was one bar of store bought Mint Chocolate Frozen Yogurt. Mint Chocolate is my favorite type of ice cream, since I was a child. However, most kids do not like it and adults for that matter. Everyone always wonders of all the flavors available, why do I always choose this? The only other flavor that competes with this one in my book is mango because I love mango anything. I only had one bar left so they had to share it, but I did not have hopes of them liking it and I figured it would end up in the garbage anyway. Their Mom thought the same, so oh boy were we surprised when we heard them fighting over how many bites each got.

Most kids like simple foods with not too many flavors going on. Sometimes what I think are simple flavors they want nothing to do with and here what takes a little more elevated palate to enjoy, they were loving. I guess anything with chocolate kids will love. Blueberry Scones no way, but Mint Chocolate Frozen Yogurt – yes. Go figure! Anyway, with them in mind, I made this homemade version, using freshly made mint extract.

With the homemade mint extract, the color was very mild as there were no artificial colors added. To boost up the color, I added a little pandan paste, which is like the vanilla extract of Southeast Asia. It added an extra layer of flavor. I think the kids will love this version also! I made this with Green Mountain Creamery 5% Greek Yogurt, however you can also make with full fat yogurt for a creamier bar. I used Ghirardelli’s Mango Sunset Ghirardelli’s Mango Sunset Intense Dark Chocolate. Infused with great mango flavor, I still got a little bit of mango into this frozen yogurt.

You can enjoy it as soft serve in just 2 hours!

Ingredients

  • Mint Extract Ingredients:
  • 1 cup mint leaves
  • 1/3 plus 2 tablespoons water
  • Frozen Yogurt Ingredients:
  • 2 cups Greek yogurt
  • 3 tablespoons mint extract
  • 5 tablespoons honey
  • 1/4 teaspoon pandan paste
  • 3 oz. dark chocolate, chopped

Instructions

  1. To make extract, combine mint and water in a food processor or blender and mix well. Put in refrigerator for at least 4 hours. Strain a few times.
  2. In a large bowl, combine yogurt, mint extract, honey and pandan. Mix well.
  3. Add chocolate and stir to combine.
  4. If desired, mix in a blender or food processor to break up the chocolate more.
  5. Transfer to a freezer safe container. Stir every hour for four hours.
  6. You can enjoy as soft serve in 2 hours or as firm frozen yogurt in 5 hours.
