Watermelon Granita

Sorbet in 10 minutes or Granita in a few hours. This simple recipe is perfect to make on a hot and humid summer day!

It’s summertime and time for enjoying ice creams, sorbets, granita, popsicles and frozen yogurt. Watermelon is one of my favorite summer fruits. It is so versatile – able to be used in both sweet and savory dishes as indicated by the list of Watermelon Recipes below. Unlike most of my recipes, there are no international ingredients for you to go on the hunt for. This Watermelon Granita…or Soft Serve Sorbet has just 4 simple ingredients!

We’ve all heard of soft serve ice cream – well how about soft serve sorbet? This is a great idea for you to always be able to make soft serve sorbet in about 5 minutes. Keep your freezer stocked with frozen fruit and whenever little tykes at home for the summer are begging you for a frozen treat, it’ll be ready in 5 minutes! This instant soft serve sorbet must be eaten immediately before it starts to melt, so make sure to freeze the rest and then you will have granita in a few hours. I almost thought of calling this a sorbita – as it can be sorbet or granita 🙂

This base recipe can be used with any fruit – it’s the season for stone fruits. Try it with peaches, nectarines or apricots! When it’s frozen, you can use an ice scream scoop for a nice presentation or scrape it out for traditional granita! Since watermelon is such a mealy fruit, scraping while the granita is freezing is not necessary. This is such an easy granita – just stick it in the freezer and forget about it!

Watermelon Granita….or Soft Serve Sorbet

Ingredients

  • 5 cups chopped watermelon, frozen
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 tablespoon lemon juice

Instructions

  1. In a high powered blender, process watermelon until it is crumbly.
  2. Add sugar, water and lemon juice. Puree until smooth.
  3. Serve immediately as soft serve sorbet or freeze for 4 hours for granita.
