If you are one of those who don’t like desserts to be super sweet, then this one is for you. Or if you are simply trying to reduce your sugar intake for weight loss goals or other health reasons, I guarantee you will love this dessert!
I used my favorite fruit, mango, in this Italian inspired dessert, however for a more traditional Italian dessert, you can replace the mango with strawberries.
The first step is to marinate the fruit.
1 mango, peeled and chopped
1 tablespoon white rum (if you prefer not to use alcohol, a good substitute would be sugar cane juice-available at Caribbean, Asian or Latin markets)
1 lime, juice and zest
1 teaspoon good quality mint tea (when you smell the tea, it should smell more like mint than tea – I use Morroccan Mint Tea). Buzz the tea a few times in the food processor, so it is like ground tea. I didn’t do this and was having strings of tea, while eating the dessert. The dessert was so out of this world I didn’t care, but I will definitely grind the tea next time.
1 teaspoon dried jasmine flowers, crushed
Combine all ingredients in an oven safe dish and stir to combine. Marinate for 30 minutes.
While the fruit is marinating, make the Balsamic Reduction
Infused Balsamic Reduction (for desserts)
2 cups Balsamic Vinegar
2 Vanilla Beans
1 Cinnamon Stick
In a skillet, place cinnamon stick into vinegar.
Split the vanilla beans and place into the vinegar.
Bring to a boil. Reduce to a simmer and reduce by half, about 15 minutes.
Hint: It is best to step out of the kitchen once the vinegar is simmering (and open a window) because as the vinegar oxidizes into the air, your eyes will start to burn. DO NOT try to speed the process by placing on high heat. Reducing slowly concentrates the sugars, without burning the vinegar. Once the sugars in the vinegar burn, your reduction will have a bitter taste.
Let cool completely to thicken the reduction. Remove the cinnamon stick and vanilla pods.
I just can’t explain the flavor of this amazing reduction…bursting with vanilla flavor, it’s sweet, but it’s not
Next, prepare the Marscapone
3/4 cup Marscapone Cheese
1 tablespoon Honey
In a bowl, combine honey and marscapone and stir to combine.
Now, broil the fruit.
Preheat oven to Broil-Hi
Broil for 5 minutes. Stir. Broil for another 5 minutes.
Remove from oven and let cool for about 10 minutes. You want it to still be warm, but not hot.
Next place a layer of broiled mango.
Then another layer of Marscapone and drizzled reduction.
Garnish with some more of the chopped mango on top and fresh mint leaves.
