I have been wanting to make popsicles for the longest time, but had to get around to buying the molds. I was at Duane Reade (the main pharmacy chain here in the NY area) and they had some molds – a set of four for only $1 – who can beat that? Now there are much nicer ones out there and eventually will get those, but these cheap ones still did the trick.
Summer is officially starting on Sunday, but it’s already here. Hot and humid will now be the daily routine again until September. When you come in all sticky and hot from the temperatures outside into a hot apartment because it takes 10 minutes for the air conditioner you just switched on to cool the room, what’s a better remedy?
Yogurt is a natural coolant which is why many hot countries eat yogurt condiments. Think of Indian food and raita. Raita not only helps cool your mouth from the fiery curries but also cools your bodies in the hot desert temperatures of India. These yogurt pops are perfect on a hot summer day to cool off your insides!
Banana Goji Berry Yogurt Pops
Prep Time: 10 minutes
Finishing Time: 4 hours
Yield: 7 pops
- 5 finger bananas (these are the half size Asian bananas)
- 1 cup plain yogurt
- 8 teaspoons goji berries
- 2-4 tablespoons of sugar (depends on sweetness of bananas)
Combine all ingredients in a blender and puree.
Pour into popsicle molds. Freeze until set.
To unmold, place in boiling water for 30-45 seconds until the popsicle easily slides out.
Filled with all this goodness, why not have a frozen treat for breakfast too? Really, is there much difference between this and a smoothie?
You can substitute dried cranberries if you can’t get goji berries
