Plantains are a staple of Caribbean cuisine. They are used in every meal sometimes. Plantain Porridge for Breakfast, Fried Plantains with Lunch, Plantains included in soup for Dinner, and Sweet Plantains roasted for Dessert. Although we don’t usually eat them at every meal on the same day, we do love plantains. Every Caribbean culture whether it is the French, Dutch, English or Spanish Caribbean uses plantains almost daily.
As a child, both green and ripe plantain were included almost every night for dinner. They were usually just boiled and only occasionally, fried. Even when we had Italian style pasta for dinner, my parents would still eat their plantain with it. Dinner was not complete in their eyes, unless plantain was there.
I inherited their love of plantain, though I don’t eat it every day as they did.
