Here is a tasty summer snack or breakfast idea, perfect to enjoy in the heat of summer.
- 3/4 cup non-fat Greek yogurt
- 1 tablespoon honey
- 1 cup blueberries
- zest of 1 lemon
- 1 tablespoon orange blossom water
- 1/3 cup oats
- 2 tablespoons pumpkin seeds
- 1 1/2 teaspoons ground cardamom
In a small bowl, combine blueberries with lemon zest and orange blossom water and toss well.
Meanwhile, toast oats and pumpkin seeds until oats are golden brown. Add cardamom and toss well.
In a small bowl, combine yogurt and honey and mix well.
To arrange parfait, first spoon yogurt into the bottom of a glass dish. Add most of the toasted oats, reserving 1 tablespoon.
Top with blueberries.
Sprinkle remaining oats on top and garnish with mint sprig.
