When people think of bread pudding, they usually think of sweet versions like the version I did here. However, bread pudding is one of those versatile foods that can be made either sweet or savory. I have already done a savory version here and now comes one more. I had some leftover spinach pesto. Since it was homemade without preservatives, I needed to use it up quickly. Adding them to the base of this pudding added such an oomph of flavor! Check here for the Spinach Pesto recipe. This version is super garlicky, so feel free to reduce the quantity of garlic if so desired. This Spinach Pesto Cheddar Bread Pudding will make a great alternative to stuffing at this year’s holiday meal. You probably have stuffing every year. Why not try something new this year!
You can also make this with store bought pesto if you prefer. You can also make variations by adding other vegetables instead or even some diced sausage or chicken. Grated carrots, chopped broccoli or cauliflower would all work well in this pudding. Adding some caramelized onions would also add some awesome flavor!
