Fafda, Besan Chutney, Green Papaya Chutney

  • 2 1/4 cups chickpea flour besan
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon red chile powder cayenne pepper
  • 1/2 teaspoon carom seed ajwain
  • 2 tablespoons oil


  • In a bowl, combine flour, salt, baking soda, red chile, carom seed and oil. Add just enough warm water for the dough to come together. (I used 1/4 cup + 1 tablespoon). Leave to rest for 1/2 hour.
  • On a lightly floured, board, roll out dough into a rectangle. Cut into strips.
  • In a deep skillet, heat enough oil for deep frying.
  • Add strips of dough and fry until golden brown. Drain on paper towels.
  • Serve with Papitey Ki Cheen & Besan Chutney.
